Nigel Slater Lazy Loaf is made with wholemeal flour, plain flour, sea salt, caster sugar, bicarbonate of soda, and buttermilk. This easy soda bread recipe creates a delicious and hearty bread that takes about 35 minutes to prepare and can serve up to 6 people.

Ingredients Needed:

  • 225g/8oz wholemeal flour
  • 225g/8oz plain flour
  • ½ teaspoon sea salt
  • 1 teaspoon caster sugar
  • 1 teaspoon bicarbonate of soda
  • 350ml/12fl oz buttermilk

How To Make Nigel Slater Lazy Loaf:

  1. Preheat the Oven and Casserole Dish: Preheat the oven to 220°C/425°F/Gas 8. Place a large casserole dish with its lid inside the oven to heat up while you prepare the dough.
  2. Mix Dry Ingredients: In a large bowl, combine the wholemeal flour, plain flour, sea salt, caster sugar, and bicarbonate of soda. Mix them together using your fingers.
  3. Add the Buttermilk: Pour the buttermilk into the dry mixture and quickly bring it together into a soft dough. Work fast as the bicarbonate of soda will begin reacting right away.
  4. Shape the Dough: Shape the dough into a round loaf, about 4cm/1½ inches thick.
  5. Bake the Loaf: Carefully remove the hot casserole dish from the oven and lightly dust the inside with flour. Place the shaped dough inside the dish, cover it with the lid, and bake for 25 minutes.
  6. Cool the Bread: After 25 minutes, remove the casserole dish from the oven and let the bread rest for 5 minutes inside the dish. Then, turn it out onto a rack to cool slightly before slicing and serving. Enjoy warm!
