How To Make This Bread:
- Preheat the Oven: Preheat your oven to 220°C/425°F/Gas 8. Place a large casserole dish and its lid into the oven to heat up.
- Mix the Dry Ingredients: In a large bowl, use your fingers to mix the wholemeal flour, plain flour, sea salt, caster sugar, and bicarbonate of soda together.
- Add the Yogurt: Pour in the yogurt (thinned with a bit of water or milk if necessary) and quickly bring the mixture together to form a soft dough. Work swiftly as the bicarbonate of soda will start reacting immediately. Shape the dough into a shallow round loaf about 4cm/1½in thick.
- Prepare the Casserole Dish: Carefully remove the hot casserole dish from the oven, dust the inside lightly with a little flour, then gently lower the dough into the dish. Cover with the lid and place it back in the oven.
