  • Extra virgin olive oil
  • 600g (1.3 lbs) raw peeled prawns
  • ½ a lemon
  • Optional: Parmesan cheese

How To Make Prawn And Courgette Pasta

  1. Prepare the courgettes: Halve the courgettes lengthways, then finely slice at an angle.
  2. Prepare the garlic and chillies: Peel and finely slice the garlic, then deseed and finely slice the chillies.
  3. Chop the herbs: Pick and roughly chop the dill or parsley.
  4. Cook the pasta: Cook the spaghetti according to the packet instructions.
  5. Cook the courgettes: Melt the butter with a splash of olive oil in a large frying pan over medium heat. Add the courgettes and cook until slightly browned.
  6. Add garlic, chillies, and prawns: Add the garlic, chillies, and prawns to the pan, cooking until the prawns are cooked through. Take off the heat and squeeze over the lemon juice.
