- 1 cucumber
- 4 tomatoes, on the vine
- 1 green pepper
- 6 black olives (stone in)
- 1 red onion, peeled
- Extra virgin olive oil (about 4 tbsp / 60ml)

- Red wine vinegar (about 2 tbsp / 30ml)
- 1 lemon
- 200g (7oz) block of feta cheese
- A few sprigs of flowering oregano
- A small bunch of fresh mint
