- 200g (7 oz) ripe cherry tomatoes
- 1 beef tomato (about 250g / 8.8 oz)
- 1 medium red onion, peeled
- 1 cucumber
- 1 green pepper
- A handful of fresh dill
- A handful of fresh mint leaves
- A large handful of black olives, stoned
- 1 tablespoon (15 ml) red wine vinegar
- 3 tablespoons (45 ml) good-quality Greek extra virgin olive oil
- 200g (7 oz) block of feta cheese
- 1 teaspoon (1.5g) dried oregano

- Prepare the Vegetables: Cut the medium tomato into wedges, halve the cherry tomatoes, and slice the beef tomato into large rounds. Place all the tomatoes in a large salad bowl. Slice the red onion very finely and add it to the tomatoes.
- Slice the Cucumber and Pepper: Use a fork to scratch grooves down the sides of the cucumber skin, then slice it into thick rounds. Deseed the green pepper, slice it into rings, and add it to the salad along with the cucumber.
- Add Fresh Herbs and Olives: Roughly chop the dill and most of the mint leaves (reserve some for garnish), then add them to the salad. Squeeze the olives over the salad to season the vegetables, then drop them in.
