  • 3 Sticks of Celery, trimmed and chopped into small pieces
  • 500 g (4 cups) Carrots, peeled and chopped
  • 200 g (7 oz) Smoked bacon lardons
  • 300 ml (1 1/4 cups) Chicken stock
  • 2 tbsp Wholegrain mustard
  • 2 tsp Dried thyme
  • Salt and freshly ground black pepper

To serve:

  • 4 tbsp Creme fraiche
  • 3 tbsp Chopped fresh flat-leaf parsley
  • Salt and freshly ground black pepper

How To Make Slow Cooker Chicken Casserole

  1. Fry the bacon: Fry the bacon lardons in a small frying pan or the bottom of your slow cooker pan (if it can be used on the hob). Let them crisp up and turn golden brown.
  2. Coat the chicken: Place the chicken thighs in a large bowl while cooking bacon and coat them thoroughly in plain flour.
  3. Prepare the slow cooker: Once the bacon is done, add the onions, celery, carrots, and bacon pieces to your slow cooker (or leave the bacon in the frying pan if you’re using it).
  4. Add the chicken and stock: Sit the flour-coated chicken pieces on top of the vegetables in the slow cooker. Mix the chicken stock, mustard, thyme, salt, and pepper, then pour into the slow cooker around the chicken.
