Recipe Tips

  • Chop vegetables evenly: Make sure the courgettes and onions are cut into similar-sized pieces for even cooking and a smoother soup texture.
  • Sauté onions slowly: Don’t rush the onions—cooking them for the full 10 minutes helps bring out their sweetness and adds depth to the soup.
  • Simmer courgettes gently: Keep the heat on low while simmering them to ensure they soften without losing too much flavor.
  • Blend in batches if needed: If your blender is small, blend the soup to avoid splattering. This ensures a smooth, creamy texture without making a mess.

How To Store And Reheat Leftovers?

  • Refrigerate: Let the leftover Courgette, Pea, and Basil Soup cool to room temperature. Then, transfer it to an airtight container and store it in the fridge for up to 3 days.
  • Freeze: Once the soup has cooled to room temperature, pour it into a freezer-safe container and freeze for up to 3 months. To thaw, place it in the fridge overnight before reheating.
  • Reheat: Transfer the soup to a pot and heat over medium heat, stirring occasionally, until it’s hot all the way through, about 5–7 minutes.
