- ½ butternut squash (about 500g / 1 lb), peeled and chopped into 4cm (1.5 inch) cubes
- ½ tbsp olive oil
- 1 onion, diced
- 1 small garlic clove, thinly sliced
- 1 mild red chilli, deseeded and finely chopped
- 400ml (1 ¾ cups) vegetable stock
- 2 tbsp crème fraîche (or sour cream), plus extra to serve
How To Make Butternut Squash Soup In Soup Maker
- Roast the Butternut Squash: Heat the oven to 200C/180C fan/gas 6 (400°F). Toss the butternut squash with olive oil in a roasting tin. Season with salt and pepper, and roast for 30 minutes, turning once, until golden and soft.
- Add to Soup Maker: Place the roasted squash in the soup maker. Add the onion, garlic, most of the chopped chilli, and vegetable stock. Make sure you don’t fill above the max line. Season well with salt and pepper.
- Cook and Blend: Press the ‘smooth soup’ function on the soup maker and let it complete the cycle.
- Finish and Serve: After blending, add the crème fraîche and blend briefly again until creamy. If you like a thinner soup, add more stock or hot water. Serve in bowls with a swirl of crème fraîche and the extra chopped chilli on top
